For my baking final I decided to make mini cheesecakes. I decided to make mini ones rather than making one big cheesecake so that I was able to give them different toppings. They turned out really well and taste super good. The only thing I would change if I were to make them again is maybe try using my silicone muffin sheet rather than using the cupcake liners because those made some funny indents in some of the cheesecakes. I would also try using different variations of toppings such as different fruits, jams, chocolate, etc. Ingredients Base: -2/3 Cup 1 Tbsp Graham crackers -1/4 Cup Butter (melted) Filling: -1 1/4 Cup Cream cheese (room temp) -1/2 Cup Sugar -2 Eggs (room temp) -1 Tsp Vanilla -1 Tbsp Lemon juice -1 1/2 Tbsp All purpose flour -3/4 Cup 2 Tsp Sour cream Toppings (optional): -Strawberries -Blueberries -Peaches Instructions Base 1. Using a food processor, blend graham crackers into a fine mixture. Pour into a bowl and add melted butter. Mix well. 2. Divide evenly into 12 muffin liners. Using a spoon, press mixture tightly and evenly. Set aside. Filling 1. Mix cream cheese until just creamy. While mixing, gradually add in sugar. Then add in eggs 1 by 1, mixing just until well combined. 2. Then add in vanilla extract, lemon juice, flour and mix again until just combined. Finally add in sour cream and mix everything together. 3. Using an ice cream scoop, divide the filling evenly into the prepared muffin pan. Gently shake the muffin pan to make the surface flat. 4. Bake in a preheated oven at 320 F for 15 minutes or when you gently shake the pan, the cheesecake wiggle a bit and the center looks not as set. 5. Remove from the oven and leave to cool down to room temperature in the pan. Place pan in the fridge overnight. 6. After chilled add optional toppings. Note 1. Do not over mix to avoid cracking while baking. 2. Easier to remove cheesecakes after they have chilled in the fridge.

Here is my sourdough starter. Unfortunately it did not bubble. It rotted. I don't think I did it properly.
Over the past few weeks I have been doing little crafts, working out, baking, painting my nails, and practicing driving to keep myself busy. My dad and I made corn hole (a lawn game where you throw bean bags and try to land them through a hole on a board) so my family and I played that. Other than that not much has been happening here considering we can't really go anywhere or hang out with anyone :( . I'm thinking about re-organizing my bedroom to give myself something to do. It's really hard for me to not be able to go anywhere but at least it will keep us all from getting sick and spreading the virus even more. Hopefully this will all be over soon. I hope you, your family, and dogs are doing well and hopefully aren't too bored!
I made the cinnamon bun muffin recipe at home. When we made them at school i'm pretty sure we used butter milk instead of regular milk. I like them a lot better with regular milk and I think they turned out really well. I think I should've made them smaller though because they were too big. I also made cream cheese icing to eat with them and it was really good and super easy to make! I made bread at home using our bread maker. It was super easy because you just have to put all the ingredients in and then it mixes and cooks it for you. First I made a loaf of cheese bread and then I made a loaf of plain bread. They both turned out really well but I liked the cheese bread better because I thought it was lighter whereas the plain bread was more heavy and filling. I made chocolate chip cookies at home to keep myself busy during social distancing. I also made oatmeal cookies and added a big chocolate chip on top. The chocolate chip cookies turned out better than the oatmeal ones because they were a little bit dry and didn't really spread much. The chocolate chip cookies turned out perfectly and I gave some to my grandparents when my parents dropped off some groceries for them.
We made cinnamon swirl muffins. I had fun making these and seeing the cinnamon swirl when I cut them to put into the muffin tray. I think I liked them better with out the icing so I didn't end up putting icing on all of mine. I added a picture of Dimitri to my slideshow because he washed all of the dishes for us!!! We made the Swedish pastry's. I thought they were okay because they were a little too sweet for me. They turned out really well though and they looked good. I think we should have waited a little bit for it to cool off before we put the icing on top because it melted and got all sticky. Oh well even as a sticky mess my friends still thought that it was good! |
